The first vintage of HORSES sparkling was 2013 and since then, its been difficult to keep the wine in stock. 100% destemmed and left on the skins for 24 hours. Gently pressed and fermented cold and slowly throughout harvest. Racked and bottled in early November to finish fermentation in the bottle. Disgorged after 5 months.
